Basil Glazed Avocado Croissant Recipe

  • 2 eggs 

  • 2 croissants

  • 4 tablespoons olive oil

  • 1 tablespoon basil

  • cherry tomatoes

  • 1 avocado

  • a handful of feta cheese

  • salt & pepper to taste


Prep: Cut the two croissants in half. Using a small bowl, mix the olive oil and basil together. Coat the top and bottom of each of the croissants with the mixture. Place in the oven at 300 degrees for 3-4 minutes or until golden brown.  

While the croissants are in the oven, place the frying pan on a medium heat. Add in vegetable oil and fry the eggs to your personal favourite style (scramble, over easy, sunny side up, poached, etc.)

Once your croissants are ready, place an egg on the bottom of the croissants and sprinkle of pepper. Next, cut the avocado into slices, cherry tomatoes into halves, and top off with feta cheese. Combine as a sandwich or eat separately, but whatever you do, Enjoy.!
