TELL US, WHEN YOU MOVED TO CAYMAN?

I first moved to the island in 2006 where I was head Chef of Kaibo up in North Side in Cayman Kai.

AND YOU LEFT ISLAND DIDN'T YOU? WHAT MADE YOU DECIDE TO MOVE BACK?

With my roll-over on the horizon, I left for Australia where I spent seven years in Brisbane. I loved Aus, but I knew my heart was back in Cayman. I spoke of the island regularly while I was away. In the end it was the community of people that drew me back. The great weather and beautiful beaches were the icing on the cake!

SO WHERE DO YOU WORK NOW? AND WHAT DO YOU DO?

I work at the Kimpton Seafire where I am the Assistant Food and Beverage Manager for AVE and Avecita Restaurants.

IT’S BEAUTIFUL IN THERE! TELL US WHAT'S YOUR FAVOURITE THING ON YOUR MENU / FAVOURITE THING TO MAKE?

That’s a tough one to decide! AVE is our Mediterranean style seafood and Steakhouse with a focus on local produce. Avecita is our Spanish style tapas where you can nibble and drink the night away. Throw in a world class beverage program and wine list and there is something for everyone.

WHERE'S YOUR FAVOURITE PLACE TO GO FOR SUNSET DRINKS?

Coccoloba is the perfect spot.  Great drinks and nibbles while watching the greatest show on island - referring to the sunset.  For a local feel, Calico Jacks is another one my faves.

WHAT'S THE BEST TOUR YOU COULD SUGGEST FOR SOMEONE THAT IS VISITING?

I highly recommend renting a car and doing an island tour. Head out to East End and North Side.  There are so many little gems to see.  Jump off and experience the many local restaurants along the way, as well as untouched and crowd-free beaches.

WHERE WOULD YOU SEND SOMEONE FOR DINNER AND WHY?

Another tough one as there are so many.  Agua, Catch and Luca are some special places. There’s also this little blue shack behind my house in West Bay with no name and they have the best oxtail on island!

FAVOURITE LOCAL DISH ON ISLAND?

The local wahoo escovitch at Over the Edge Restaurant (Old Man Bay). Perfectly cooked every time with a touch of spice  A great restaurant with a local feel.

ANY ADVICE FOR SOMEONE LOOKING TO MOVE HERE?

When here, get active within the community.  There are plenty of organizations that can use a extra pair of helping hands here on island.  Whatever your interests are, there are plenty ways to contribute. It’s a great way to give back to this beautiful island as well as meet and make new friends.
