Serves: 4 Popsicles
Hands-on Time: 8 minutes
Total Time (excluding refrigeration): 16 minutes
INGREDIENTS:
1 cup fresh raspberries
½ cup fresh blueberries
½ cup fresh black berries
milk or coconut milk
2 table spoons organic honey
1 ½ greek yoghurt
4 small mason jar containers / small glass
INSTRUCTIONS:
Prep: Wash and cut all your fresh fruit and be sure to separate the dark berries from the red berries. Once that’s done, place the berries in two bowls and leave in the freezer for 24 hours.
After 24 hours, take out your red frozen berries and place in a blender. Add a splash of milk and blend until the mixture is thick and smooth. Empty into a bowl. Wash the blender and do the same with the dark berries.
In a third bowl place 1 ½ cups of greek yoghurt with 2tbs of honey and mix together.
Place a layer of the yoghurt mixture in the bottom of a mason jar, followed by the and I red berries and then the black ones.
Once your mason jars are completely filled, slide in a popsicle stick in the centre and pop them in your freezer for 24 hours.
To successfully remove your popsicle from the glass jar, take a bowl of hot water and set your mason jar in the water for 15 seconds. Give your popsicle stick a light pull and it should come out perfectly.
N.B You can use frozen berries instead if preferred.
